What Happens to Leftovers?
Hosts often ask us if they can keep leftover food for to be served the next day. While it’s a thoughtful gesture, it’s not always safe. Once food leaves our care, we cannot ensure it’s stored at the correct temperature—especially during warmer months. Uncovered or poorly stored food can be exposed to bacteria, insects, or airborne particles.
Even when transporting food, we use our fridge trailer and insulated storage to keep everything safe.
Our kitchen consistently achieves the highest standards of cleanliness and food safety, having received the maximum 5-star rating at every single inspection. BBQs, Buffets & Real-Time Adjustments
For buffets and live-service events, we prepare on-site and adjust quantities based on real-time demand—cooking more of what’s popular and reducing what’s not. This adaptive method reduces overproduction naturally.
At BBQ events, where guests may choose from 3 to 5 grilled items, we never plan for one piece per person. Some guests might want two steaks, others none—so we bring more than needed, storing everything safely chilled until it’s needed.
Unused Ingredients Are Not Wasted
We do not reuse or re-freeze raw ingredients for private events. Instead, any unused items are:
Donated to charity events we support, or
Used at our own public tastings.
We freshly purchase all the meat, fish, and vegetables from local suppliers a week before each event—so they stay fresh, purposeful, and never wasted.
We Serve Guests for a Reason
At self-serve stations, we serve each guest directly. This helps prevent overloaded plates and unnecessary waste. We always encourage guests to return for seconds—rather than taking too much in one go and letting it go cold or uneaten.
